This Still Austin Single Barrel was bottled at 116-proof, boasting a mash bill of 70% non-GMO white corn, 25% rye, and 5% malted barley. 100% Texas grown. Hand-selected for its unique and highly-desirable characteristics, this barrel is genuinely one-of-a-kind. Their spirits are made from 100% Texas-grown grains and distilled in a 50-foot column still, hand-built in Scotland. The bourbon is then aged for at least two years in casks crafted from sustainably grown American oak, perfectly charred to allow the spirits to move in and out of the wood.

Something magical happens in the Texas heat - having lived in the state for years, I can tell you that the long summers pack a mighty punch. And what that does to a barrel that sits quietly aging bourbon results in character, complexity, and color within just a few years that would take 3-fold+ the time elsewhere to do the same. Still, Austin has harnessed the character and style of its namesake city to create something unique. This selection was an instant favorite from a range of 5 final selections that our tasting panel walked through. It hit this beautiful balance between what I enjoy in some of my favorite pours and nuances that I would characterize as Texas bourbon. There are baking spices and pancakes with syrup on the nose, plus complex flavors like subtle leather and a nuttiness. At first sip, you'll discover malted chocolate, roasted nuts, and this character crème brûlée. That malted chocolate builds wonderfully with every sip and new tasting notes develop in complement. The finish lingers with dark cherry, espresso, tobacco, and subtle rye spice.
