      Beyond the Label

      A rare, superior Tennessee Whisky and a one-of-a-kind liquid experience. Over the years, Cascade Hollow Distilling Co. has carefully set aside a limited number of casks holding their most precious and richly complex George Dickel Tennessee Whisky. While no two casks are the same, and each will vary in taste, you can expect a rich and complex liquid in every bottle. The variability that makes single barrel spirits so special is strongly expressed in these older liquids, with the influence of slight variations in their aging conditions growing over time. The color will be dark, rich leather brown from the years spent in new American oak.

      There is no place that is quite like Cascade Hollow. Just over an hour south of Nashville and within 30 minutes of Lynchburg, tucked away near Normandy Lake and surrounded by forests, you find yourself in an incredibly storied distillery that produces some of my favorite pours. There was no doubt that while traveling from Atlanta to Louisville earlier this year, we would make a third barrel selection stop in this quiet and majestic stop. The result was a selection of two George Dickel "15-Year-Old" single barrels that will astound you—here is the first of those picks.

      The "15-Year-Old" statement is quoted because, for single barrels coming from George Dickel, there are only two label designations: 9YO (Brown Label) and this 15YO (Grey Label). What's inside is nearly always a gift—for instance, this single barrel release is 17 Years and 7 Months old! On the nose, this smells like fresh oatmeal cookies with chocolate and caramel and a hint of oak. At first taste, this is clearly 80-proof. You won't need a rock for this pour—it's one that anyone can likely enjoy neat. You'll discover honey, deep orange citrus, mint, and florals on the palate. The finish takes that honey sweetness and introduces oak tannins, leather, and a hint of herbal tea. This is a medium finish with a subtle warmth. It's a fun example of what Dickel can do and how incredibly unique barrels can become, especially having developed through 17 1/2 years.
